Brand-wide culinary overhaul introduces elevated Italian flavors, expanded shareables and refined classics
Dallas, TX (RestaurantNews.com) CRÚ Wine Bar & Bistro is welcoming the new year with the debut of its new dinner and brunch menus, now available at all locations. The refreshed fare, developed in collaboration with Dallas-native restaurant industry veteran Mark Brezinski, spotlights crafted appetizers, Italian staples and revitalized CRÚ classics, marking the next step in its continued evolution following its 2025 acquisition.
With authentic flavors and chef-driven creations, the new dinner menu features:
- Barolo Braised Short Rib: Slow-braised beef finished in Barolo wine, served over creamy butternut squash risotto with natural jus
- Cast Iron Seared Wagyu Picanha Steak: Rich, tender wagyu paired with crisp papas bravas, jumbo asparagus and fresh chimichurri
- Jumbo Scallops: Perfectly seared scallops atop spinach parmesan risotto with heirloom tomato butter sauce
- Chicken alla Francese: Lightly crisped chicken with a bright lemon-herb sauce and garlicky broccolini
- Roman-Style Pinsa Pizzas: Hand-stretched, airy crusts topped with San Marzano tomato sauce, fresh mozzarella and selections such as Margherita, The Butcher and Prosciutto & Fig
- Chocolate Fondue for Two: A warm dessert served with toasted pound cake, alongside seasonal fruit and marshmallows
The menu also introduces new shareable plates and boards designed for pairing and gathering, including Wagyu Meatballs, Goat Cheese Beignets, Braised Short Rib Arancini, New Zealand Lamb Lollipops, Red Argentine Shrimp, build-your-own cheese flights and CRÚ’s signature cheese fondue.
“Our goal with this menu was to elevate our offerings without losing what makes CRÚ special,” said Jim Oetting, culinary director for CRÚ Wine Bar & Bistro. “These dishes were created to pair naturally with our wines and encourage guests to explore, share and stay awhile as we continue to evolve the CRÚ experience.”
The brunch menu mirrors that approach with elevated daytime favorites, including a Smoked Salmon Board, Brioche French Toast with lemon mascarpone and warm blueberry syrup, classic and short rib–topped Eggs Benedict, Steak and Eggs with wagyu picanha and a Fromage Omelette made with Nancy’s Camembert.
While the food menu has been refreshed, CRÚ’s wine program remains unchanged, staying true to its roots with a curated selection of boutique and global wines. Looking ahead, the brand plans to expand its beverage options to include high-end spirits by the end of 2026.
